Ingredients:
1/2 cup cooked quinoa
2 cups water
1/4 can corn niblets - drained
1/4 can beans of choice - rinsed and drained
Pinch dried cranberries
1 stalk celery - sliced
½ package edamame - cooked and drained
1 red bell pepper - diced
1 tbsp avocado oil - to taste
2 tbsp lime juice - to tast
Pinch of black pepper
Directions:
In a medium sized saucepan bring a pot of water to boil. Add quinoa, turn the heat to simmer and cook covered for approx. 15 minutes. Remove from hit and stand for 5 minutes, fluff with fork.
Move quinoa into a large bowl with all other ingredients and toss. Serve, Enjoy!
